This soup is inspired by the flavours of a Hong Kong Curry and the methods of a Singaporean Laksa - where vegetables are blended and turned into a soup with seafood and coconut milk. I add fresh noodles along with grilled chicken thighs and tofu puffs. Based on your preference, I suggest you add some finely chopped spring onions and a chilli oil of your choice.

Sen Noods

I started cooking as more of a necessity as a Uni student living in London. I was missing Asian food from home but couldn't afford to eat out. Slowly over the years it has become the biggest passion in my life and during lockdown, I decided to quit my job as a Data Scientist, bought a van and started a street food business called Sen Noods. I am now passionate to share the noodles I grew up eating, and the ones I enjoy making.

Excellent, as always but now with the added benefit of a proper container for the chicken & sauce! Another added advantage is that I can microwave the sauce (2 mins, stir, 1 min), which saves washing up another saucepan! 🤣
I would like to try this dish with the rice vermicelli noodles that they sell on their stall sometime.

I really enjoyed the dish - the only thing is that the noodles portion size can be bigger.

The taste was amazing! I actually could have done with more, it was so tasty. Only issue was that it has to cook in pan after defrost and so not great for quick meal. Also no veggies.
